This Great Minnesota Goulash recipe is a very popular meal created and eaten by families throughout Minnesota.  Every family has a variation of a recipe, this is one of the many.

Supplies

  • Large kettle or dutch oven
  • Kosher salt
  • Elbow noodles
  • Onion
  • Green pepper
  • Lean ground beef
  • Salt
  • Pepper

Ingredients

  • 2 cans of tomato juice (46 fl oz)
  • 2 bags of elbow macaroni noodles (16 oz)
  • 1 green pepper
  • 1 yellow onion
  • 2 lbs lean ground beef
  • Salt
  • Pepper

Directions

  • Dice up one onion and one green pepper
  • Cook diced onion and green pepper to soften
  • Boil enough water to cook 24 ounces of elbow macaroni noodles.  Add kosher salt to the water
  • Remove diced onion and green pepper from cooking
  • Brown 2 pounds of lean ground beef
  • Add diced onion and green pepper to browned ground beef
  • Add half of the tomato juice to ground beef, onion, and green pepper
  • Add strained al dente elbow macaroni noodles and add the rest of the tomato juice (2 cans total)
  • Add salt and pepper to desired taste
  • Cook until tomato juice has reduced
  • Serve in a bowl
